Hi everyone! There is good weather today, we are trying to enjoy it as much we can, by going outside with the children, but today my daughter ask me to make some cupcakes with fruits. So we decided to make some cupcakes and put some raspberries and blackberries on them .
After researching and talking to family members I used the following recipe and I had a great result.
Raspberries and Blackberries Cupcake Baking Activity
1 cup of Caster sugar
150 g of Butter
1 cup of self raising flour
2 eggs yolks
3 teaspoons of vanilla
This recipe makes about 15 medium cupcakes
Method of preparation:
Soften the butter first and then add the sugar. Then add the eggs, egg yolks and vanilla.
Add the self raising flour and mix well with the mixer machine until it is pale and creamy.
We used a piping bag to put the mixture in the cup cases so it would spread more evenly in the cup cases.
Put in a 180 C preheated oven, it takes about 15 minutes to cook.
For the butter-cream icing :
- 140g softened butter
- 280g icing sugar
- 2 tbsp of milk
- Food colouring ( If you want to have the intensity of the color you see in the picture, then you have to put a good amount of food colouring)
- To decorate with the coloured icing we used a number 30 steel nozzle making small circles and then putting the raspberries and blackberries on the top of the cupcake.
